- 500g ripe tomatoes, a mix of colours if available

- 1/2 block feta cheese

- 1/2 red onion

- small handful of dill


for the dressing;

- 2 tbsp olive oil

- 1/2 tbsp balsamic vinegar

- salt + pepper to taste

- ensure the tomatoes are at room temperature before using. Slice the tomatoes in halve and put into a serving bowl

- thinly slice the red onions + add to the tomatoes. Mix the dressing ingredients together + pour over tomatoes. Leave for 5 mins. 

- break the feta into rough bite size pieces, add to the tomato mix, and garnish with sprigs of dill, and extra seasoning if needed
